Mexican food is simply delicious and wholesome. Not only that it is also quite healthy. The unique thing about this food is that the Mexican flavours often are similar to Indian flavours and spices. Hence, it is very trending and high in demand. 

Mexican food is also healthy due to the raw materials it uses, hence you can make it a part of your weekly meal! So we compiled a few recipes for you to try! let's begin-

Mexican Tacos

Ingredients-

  • 1 Tbsp. olive oil 
  • 1 pound of ground chicken
  • 2 tablespoons tomato paste
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon dried oregano
  • 1/4 cup water or chicken broth
  • 1 teaspoon chilli powder
  • 1 teaspoon ground cumin
  • 1/4 teaspoon ground black pepper
  • Corn tortilla or flour tortilla
  • Diced avocado or guacamole
  • 1 cup cheese, shredded
  • 2 tomatoes diced
  • 1 medium white or red onion diced
  • Salsa
  • Finely chopped fresh cilantro
  • Sour cream
  • Lime wedges

Method-

  1. Heat oil in a pan and add the chicken when oil is sizzling.
  2. Stir as the meat cooks evenly and begins to brown. This process will take between 6-8 minutes. 
  3. Add the broth, tomato paste, cumin, chilli powder, oregano, garlic powder, sea salt, and black pepper to the pan.
  4. Reduce the heat to medium and allow the meat mixture to simmer for about 3-5 minutes until the sauce becomes thick. Stir occasionally and then set aside.
  5. Heat your tortillas by putting one tortilla at a time into a hot ungreased thick-bottom pan for 30 seconds on each side.
  6. For each tortilla, add about 2-3 tablespoons of your taco meat mixture. Top the ground beef mixture with onion, cheese, cilantro, and tomato.
  7. Add whatever other garnishes you want to your tacos, including sour cream, salsa, 
  8. Squeeze the lime juice over your assembled tacos and enjoy!

Vegetarian Taquitos

Ingredients-

  • 1/2 cup cooked black beans
  • 1/2 cup Corn 
  • 1 cup shredded cheese
  • 1 teaspoon ground cumin
  • 1/4 teaspoon garlic powder
  • 1/2 teaspoon kosher salt
  • 12 corn tortillas

Method-

  1. Preheat the oven to 200 C
  2. Place the beans, corn, cheese, cumin, garlic powder, and salt in a bowl and stir to combine.
  3. Place two corn tortillas at a time in between two sheets of damp paper towel and microwave for 20-30 seconds to loosen
  4. With one tortilla in front of you place 2 tablespoons of the mixture on the side closest to you and roll it up.
  5. Place the taquitos seam-side down on a foil-lined cookie sheet, spray the tops lightly with cooking oil and bake for 25 minutes.
