Lotus Puranpoli from Trivedi Treats
Puranpoli is a favourite in Maharashtra during festivals. Puranpoli is a sweet flatbread stuffed with sweet items, and to put it romantically, it represents the Indian soul. Trivedi Treats took our beloved Puranpoli and gave it a modern twist; their Lotus Puranpoli is both nostalgic and new.
This Puranpoli uses tuvar dal in the dough, and it manages to be fluffy with just a hint of nuttiness. The filling is compliant with the classic - the golden mixture of chana dal, golden jaggery. The addition of cardamom and the mild floral elements make this authentic, but at the same time, lend a sense of elegance to the product. It's a great salute to the Indian ability to innovate while maintaining our roots. With her skills, Trivedi Treats represented this dish in a lotus shape, making the dish yield this name!
Tip: Slightly warming it before serving and adding a spoonful of ghee will take it to the next level.

Spinach Marble Dhokla by Secrets of Kitchen
Dhokla is undoubtedly the signature healthy snack of western India. But Secrets of Kitchen using Dhokla has added an impressive visual twist to this steamed dish with its Spinach Marble Dhokla!
Marbling is typically a technique used for baking and preparation. Here, however, we see it applied in a savoury steamed dish so cleverly. Bright green spinach puree is tucked between different layers of typical dhokla batter parts to create a visual two-tone pattern. And it’s nutrition-packed! The key to dhokla is its fluffy, sponge-like texture, which it holds, while spinach lends iron, anti-oxidants and slight earthiness.
Tip: Temper that final hit of aroma with mustard seeds, sesame, and curry leaves.

It was naturally colored with beetroot, packed with lentils to combine protein and carbs, and most importantly, delicious!
