Dates Dryfruit Roll

Ingredients

  • 3 cups deseeded khajoor /dates
  • 1/4 cup desiccated coconut
  • 1 Cup all chopped nuts-
  • as required Almonds, cashews
  • Walnuts,pistachios,chirongi
  • 1 tbsp ghee
  • 2 tbsp poppy seeds
  • 1 tbsp pistachios flakes

Instructions

  • First remove the seeds of the khajoor and chop them.
  • In a pan heat tsp of ghee in low flame. Add poppy seeds and pistachios flakes, stir continuously and roast for a min. Take out in a plate.
  • In the same pan add all chopped nuts and roast them too for a min or two. Take them out and keep aside.
  • Now in a grinder jar add chopped dates and coarsely grind them.(Add desiccated coconut along with dates while grinding) this helps to dates grind well and also combined well.
  • Now in a pan add remaining tsp of ghee then add grounded dates, stir and cook on low flame until it becomes soft or lumpy mess.
  • Now add all chopped roasted nuts and quickly mix well.
  • Switch off the flame and let it cool for a while.now make tight cylindrical roll. Spread poppy seeds and finely chopped pistachios on butter paper, keep the roll on it and grab an edges of the butter paper and roll it nicely so that poppy seeds and pistachios are evenly coated. tightly roll with butter paper or cling wrap and refrigerate for at least 30mins.
  • Once set cut it into 1cm pieces. Healthy and sugar free dates dryfruit roll is ready.
