Medu vada is a popular south Indian snack. They are doughnut type fried vadas made of lentils. It is a crispy savory enjoyed with sambhar and chutney.

  • Urad dal 1 cup
  • Moong dal 1/2 cup
  • Toor daal 1/4 cup
  • Green chillies 2 units
  • Ginger 1 units
  • Jeera 1/2 teaspoons
  • Oil for deep frying 300 mililitres
  • Roasted chana daal 2 tablespoons
  • Garlic 4-5 units
  • Kashmiri red chilli 4 units
  • Tamarind pulp 1 teaspoons
  • Onion 1 units
  • Salt as per taste

Instructions

  • Wash all 3 dals and soak for 4 to 5 hrs.
  • Drain the water completely and grind it well, add required water.
  • Make a coarse and thick batter, adjust the consistency.
  • Add salt ,green chilies, grated ginger and jeera to the batter. Whip well with fingers.
  • Now heat the oil in a deep bottom kadai.
  • Fill the medu vada batter in medu vada maker.
  • When the oil is hot, fry vadas by pressing the vada maker machine.
  • Deep fry the vadas till they are golden brown and crisp.
  • Serve with chutney and sambhar.
  • Take all the ingredients, add very little water and grind in a blender.
  • Serve the chutney with vadas.
