Spinach and lasagna roll ups

Ingredients

  • All purpose flour 2 cup
  • Eggs 4 units
  • Salt as per taste
  • Oil 2-3 tablespoons
  • Mozzarella cheese 2 cup
  • Chopped spinach 3/4 cup
  • Ground black pepper 1/4 teaspoons
  • Marinara sauce 1 cup
  • Dried oregano and basil powder 1/2 teaspoons
  • Garlic powder and chilli flakes 1/4 teaspoons
  • Cooked lasagna noodles 8 units
  • Basil leaves for garnishing
  • Processed cheese for garnishing

Instructions

  • In a bowl, mix together flour and salt.
  • In another small bowl, break the eggs and beat them well. Pour the beaten eggs into the flour.
  • Mix together to form soft dough. If you feel that the eggs are not enough to form the dough, add 2-3 tsp of oil to make them come together. Do not knead too hard.
  • Close the bowl with a lid and rest for at least 1 hour.
  • After 1 hour, divide the dough into 8 medium sized balls.
  • Use flour to dust and roll out the balls into thin sheets as much as you can manage. The thinner the better.
  • Cut them using a pizza cutter or a sharp knife into strips of rectangle shape. Let the sheets dry for a while.
  • Put them in a pan and pour hot water over them (boiling if you like) and let them soak & soften just a few minutes. Cooked Lasagna noodles are ready.
  • Preheat oven to 350 degrees F.
  • In a small bowl, stir together all of the filling ingredients (using only 1 cup of the mozzarella and setting the remainder aside.)
  • In a small bowl, whisk together the marinara sauce and spices. Spread 2/3 cup of the marinara sauce mixture in a thin layer on the bottom of a baking dish. Set aside.
  • To assemble the lasagna roll-ups, gently place ¼th cup of filling in a thin, even layer across the entire lasagna noodle. Gently roll up the noodle.
  • Place the lasagna roll-up, seam side down, in the prepared baking dish and repeat until all the lasagna noodles are filled.
  • Pour the remaining 1/3 cup of marinara sauce over the tops of the lasagna roll-ups. Sprinkle the remaining 1 cup of mozzarella cheese on top of the roll-ups
  • Loosely cover the baking dish with aluminum foil, and bake for 15 minutes. Remove foil, then bake for another 15 minutes.
  • Garnish with basil leaves and Processed cheese if desired. Enjoy !
